November 14 1-4pm Increasing the Value of Freezer Beef Carcasses

 

 

 

We will be going over the steps that can be taken to increase the value of a beef carcass in a freezer beef sales setting, with minimal equipment and time.

The day will include discussions on the economic importance of increasing the value of beef cuts, presentations from equipment representatives, ingredient suppliers and those involved in the process at VG Meats. The premise taken was to take the least demanded cuts of a beef carcass and, with some work, add value so that your freezer beef customers will find them more convenient and desirable.

We will go through 4 examples of the products that we are making to demonstrate the level of involvement required.
